EASY FRENCH BREAD

My hubby love french bread.  But, it takes a bit longer time to get ready for baguette. This is the perfect and easy recipe for french bread.

Recipe adapted some from Your Home Based Mom and Steamy Kitchen

INGREDIENTS

1/4 cup warm water (105-115 degrees)
1 pkg or 2 1/4 teaspoons dry active yeast
1 teaspoon sugar
3 1/2 - 4 cup bread flour
1 tablespoon sugar
1 teaspoon salt
1 cup + 4 tablespoons warm water
1 egg white and 1 tablespoon water.



METHOD:

1.  Combine water, yeast and 1 tsp sugar into a bowl. Allow to stand for 5 minutes until yeast is bubbly.
2.  Place all ingredients in the bowl of your stand mixer and knead at medium speed for 5 mins.
3. Dough should clear the sides but stick to the bottom. If it is too sticky, add 1 tablespoon of flour at a time. If too dry, add 1 tablespoon of water to dough to adjust. Let the dough rest for 5 minutes. Turn the mixer on again and mix for 10 minutes.
4.  Allow to rise until double (about 15-20 minutes)
5.  On a lightly floured surface roll out with a rolling pin. (May divide dough into two pieces for two smaller loaves if desired)
6.  Roll dough up jelly roll style and turn ends under and place seam down on a greased cookie sheet. 7.  Cut 3 to 5 diagonal slits into each loaf (only about 1/4 inch deep) with a sharp knife.
8.  Mix together egg white and 1 Tbsp water and gently brush on loaves.
9.  Preheat oven to 230C.
10.  Boil a pan of water and then put it into a shallow dish.
11.  TURN OFF OVEN
12.  Place pan of water on lower rack and then bread on shelf above pan of water.
13.  Allow to rise until double (about 20 minutes)
14.  Remove pan of water
15.  Turn oven to 210 degrees and bake bread for 20 minutes or until bread is golden brown.
16.  Remove bread to cool on rack completely.
