Three Cups Mushroom (San Bei Ku) 三杯菇

This is something we had on our Taipei trip recently and it inspired me to try it at home. The mushroom is a perfect substitute for chicken and this dish is suitable for a vegetarian meal. It tastes so good we didn't miss the meat.

Three Cups Mushroom (San Bei Ku) 三杯菇 Recipe

INGREDIENTS:

300g king oyster mushroom, cut into your desired size
6 cloves garlic
2 inch ginger, sliced thinly
2 dried chillie
1 cup thai basil leaves

1 1/2 tbsp sesame oil
1 1/2 tbsp vegetable oil

Seasoning:
1 tbsp light soy sauce
2 tbsp chinese rice wine (I used shaoxing rice wine)
1 tsp brown sugar

METHOD:
  1. Combine all the seasoning in a small bowl and set aside.
  2. Heat up oil in a wok, saute the garlic and ginger till aromatic.  
  3. Add in dried chillie and oyster mushroom.  Add seasoning and stir fry till mushroom become soft.
  4. Add basil leaves, quick stir and dish out.
  5. Serve hot with steamed rice.
