Homemade Noodles with Thai Basil Chicken & Prawn

We wanted a change from the usual rice so I thought I would try some homemade noodles. We happen to have a lot of Thai basil growing in our garden and it inspired the Thai style noodle dish. My family loved it very much and it will be a recipe I will definitely make again.


Yields: 5 servings



500g bread flour
1 egg
1 tsp cooking oil
½ tsp salt
200ml – 220ml water


1.  Place the bread flour in a stand mixer bowl. Make a well in the centre; add an egg, oil, salt and the water. With the dough hook attached, knead for about 10 minutes until the dough comes together, smooth and springy. Add 1 tablespoon of water at a time if the dough is too dry. The dough should not be too wet as it is very hard to work through the pasta machine.

2.  Cover the bowl with a damp cloth and let the dough rest for one hour.

3.  Transfer dough to a table top and make into a log. Cut the dough into 6 portions.

4.  Flatten each dough by passing it through a pasta machine a few times until you achieve a long and thin dough. Make sure to keep the dough well floured to avoid sticking on the machine. Start from the thickest setting, and then adjust downward as thin as you prefer.

5.  Then pass the thinned dough on the spaghetti setting to cut it into noodles. Flour the noodles and place them on a tray or you may hang them on a rack.

6.  Bring a pot of water to boil over medium heat. Add few drops of cooking oil. Then add in noodles and cook for 1 ½ minutes. Once noodles are cooked, scoop out and immediately transfer to a bowl of water with few pieces of ice. Then drain the noodles.


Bread flour will make the noodle more chewy and springy in texture. If you do not like this texture, then use all purposed flour or plain flour.



200g chicken breast, cut into small cube
200g small prawn, remove shell and cut into small cube
150g basil leaves
3 fresh red chillies, seeds and ribs removed, cut into thin slices
3 shallots, sliced thinly
4 cloves garlic, chopped
4 – 6 tbsp oil
½ cup water
2 limes, quartered

2 ½ tbsp fish sauce
1 tbsp light soy sauce
¼ tsp dark soy sauce
1 tsp brown sugar


1.  Combined all the seasoning ingredients in a small bowl, stir well and keep aside.

2.  Heat oil in a wok over medium heat, add shallots and garlic. Fry till fragrant.

3.  Then add in chicken, prawn and cut chillies. Stir fry for a while until chicken and prawn cooks through.

4.  Add in seasoning ingredients and water. Keep stirring and bring to boil. Lastly, add the basil leaves and stir well for few seconds. Off the fire and remove from the wok.

5.  Place one portion of cooked noodles in a shallow bowl. Add 3 tablespoons of Thai Basil Chicken & Prawn and mix well. Squeeze some lime to serve.
