Giant Cupcakes

Giant Cupcake on 6 layers of Pandan Cotton Cake and icing with Swiss Meringue Buttercream.  Size of the cake is 4.5 inches diameter base, 6.5 inches diameter top and height is around 6.5 inches.  Suitable for baby birthday or baby shower party. ☝

  3. Hi. Your buttercream looks so gorgeous! I always fail at making buttercream. My last batch ended up runny after adding the butter, no matter how long I beat the mixture. Can you give me some tips to get it to the right consistency?

    1. Thank you, Hanna. It could be your meringue still warm. I normally put the meringue in freezer for 5 to 10 minutes. Then add the butter and beat until the mixture comes together. You may also want to change to paddle attachment when beating the butter. The best is do in the aircond room.
