Butterfly Pea Flower Spaghetti

The Butterfly Pea Flower seems to be gaining in popularity lately.  We have some growing in our garden and I usually use it to brew a drink with pandan leaves.  This time, I wanted to try something different and experiment with using it to make a pasta. I made Butterfly Pea Flower Spaghetti using the Phillips Noodle Maker. To be honest, the Butterfly Pea Flower doesn't really add any flavour but it does make the pasta look unique.

Butterfly Pea Flower Spaghetti Recipe


Yields:  5 servings

INGREDIENTS:

100g plain flour
400g bread flour (high protein flour)
190g (2 eggs + butterfly pea extract)
1/2 tsp salt

Butterfly Pea Flower Extract:  
30 butterfly pea flowers (fresh or dried)
100ml water

METHOD:

Butterfly Pea Flower Extract:
  1. In a small pot, boil butterfly pea flower and water under low heat for a short while to extract the colour.  Drain and squeeze the water.  Set aside.
Making Noodle using Philips Noodle Maker:
  1. Please follow instructions as per your noodle machine.
  2. Boil the spaghetti for about 2 minutes and add to sauce of your choice.
Notes:
  1. You may store this pasta for later use by first steaming over high eat for 10 minutes then store in fridge. It should keep up to about 3 to 4 days.
  2. For making the spaghetti manual, please add 10g more liquid.  Total liquid will be 200g.
