Homemade Spaghetti Aglio Olio with Tomatoes and Shrimps

After having Philips Noodle Maker, I stopped using store bought spaghetti.  Fresh pasta is always better.  Lately, I have been learning how to cook a tomato aglio olio.  During my trip to Milan, I discovered a fresh tomato aglio olio spaghetti I could eat almost everyday. After doing some research and experimenting, I think this aglio olio is very close to the taste I remember.

Homemade Spaghetti Aglio Olio with Tomatoes and Shrimps Recipe

Yields: 4 servings

Homemade Spaghetti


72g plain flour
288g bread flour (high protein flour)
135g (2 eggs + water or all eggs)
1/2 tsp salt 

  1. Making Noodle using Philips Noodle Maker. Please follow instructions as per your noodle machine.
  2. Steam the spaghetti for 10 - 15 minutes and set aside.
  3. When pasta sauce is ready, boil the spaghetti for about 2 to 3 minutes and drain.  
  • You may store this pasta for later use in fridge. It should keep up to about 3 to 4 days.
  • For making the spaghetti manual, please add more liquid.  Total liquid will be 145g.

Tomatoes and Shrimps Aglio Olio Sauce


1 box (275 g) cherry tomatoes
8 – 10 cloves garlic, sliced
1 big yellow onion, chopped
150 ml – 200 ml white wine
12 big prawns
4 – 5 stalks corianders, chopped
Salt to taste
1/2 cup (125 ml) or less of olive oil 

Dried herbs:
1 tsp dried basil leaves
1 tsp dried coriander leaves
Pinch of dried chilli
Black pepper to taste

  1. In a pan, heat olive oil over medium low fire.  Saute the garlic, then add in cherry tomatoes.  After a minute, add in onion and all the dried herbs.  Cook until the cherry tomatoes become soft.  
  2. Add in prawns, stir a minute then add in white wine and season with salt to your taste.  Off the fire.
  3. Boil the spaghetti and drain as above.
  4. Heat up the sauce over medium heat, add the drained pasta and toss through well. Turn off the heat, add coriander and toss through. There will be enough residual heat to warm the coriander through.
  5. Serve immediately.

If white wine is not available at your home, you may replace with Shaoxing Rice Wine.  Of course the taste will be slightly different.  But, it is still taste very delicious.
