Thai Mango Salad!

It is Mango season now and mangoes are everywhere! I found this green mango in the market that isn’t usually for sale. The mango was exactly the kind I would use for a Thai mango salad that I used to make at home in Penang many years ago and it was just perfect.

INGREDIENTS:

2 green mango
2 shallots, sliced thin
4 chilli padi (Bird’s Eye Chillies), cut into half
20g dried shrimp, fried
25g toasted peanut

Dressing:
1 tbsp fish sauce
3 tbsp brown sugar, dissolve with 2 tbsp boiling water
1 tbsp lime juice

METHOD:

1.  Peel mango and slice thin, then cut into small strip. Cut shallots, chilli according to the above. Fry the dried shrimp till crispy. Set aside.

2.  In a mixing bowl, combine all the dressing ingredients and mix well. Then, add in the mango, shallots and chilli and toss well. Transfer to a plate and top with dried shrimp and peanut.
