Thai Watermelon Salad!

My Mother in-Law purchased two rather large watermelons that we had trouble finishing. So, I decided to try a watermelon salad with mint as we have some that has been growing very well in our garden.

The combination of Thai inspired flavours work very well with the sweet watermelon. This is a sure way to enjoy a large watermelon!

Recipe - Thai Watermelon Salad


INGREDIENTS:

¼ big watermelon or ½ medium watermelon, cut into big cube and remove seeds
Juice from 1 lime
1 ½ tbsp fish sauce
¼ tsp sea salt or to taste
A bunch of mints leaves, chopped
2 tbsp roasted black sesame seeds
¼ cups roasted nuts (cashew nuts, ground nuts or any other nuts)
Freshly ground black pepper

METHOD:
  1. Add in lime juice, fish sauce and salt in the large bowl. Stir well.
  2. Gently combine the rest of the ingredients and sprinkle wih black sesame seeds and roasted nuts.
  3. Serve immediately.
