Hello Kitty Cookies
These are cookies that little girls can never get enough of. They don’t only look cute but taste good too. I made these for my niece and she was thrilled!

RECIPE
Yields: 22 pieces
INGREDIENTS:
125g butter (room temperature)
50g brown sugar
¼ tsp vanilla extract
175 g all-purpose flour or plain flour
75g potato starch
½ tsp double action baking powder
½ tsp salt
Heart shaped decoration sugar
Round shaped decoration sugar
Glue: 1 tbsp + 1 tsp icing sugar dissolved with 1 tsp hot water
METHOD:
- Move the oven rack to the middle position and preheat oven to 150 degree C. Line a baking trays with parchment paper and set aside.
- In a bowl, shift in the flour, potato starch, baking powder and salt. Set aside.
- In a bowl of a stand mixer beat the butter and brown sugar together until light and fluffy. Scrape down the sides of the bowl with a rubber spatula. Add vanilla extract, beat on medium-low until well mixed.
- Gradually stir in the flour mixer to butter mixer until well-combined.
- Pour onto tabletop, knead with your palms to form a dough.
- Roll out the dough to ¼ inch thick, use Hello Kitty shape cookie cutters to cut the shape. Dip the bottom portion of the mound/cutter in flour first each time before cutting the dough to prevent the dough from sticking. Arrange the cookies on the lined baking tray, 1 inch apart.
- Bake in the preheated oven for 25 - 30 minutes till cooked through. Cool on a wire racks.
- Dip the bottom part of heart shape decoration sugar in glue and place on as the ribbon. Dip bottom of round decoration sugar in glue and place on as the eyes and nose.
- Store in airtight container.

DeleteThank you for your comment. Yes, I agreed with you the dough stick to the mould. Please dip the bottom portion of the mound/cutter in flour first each time before cutting the dough to prevent the dough from sticking.
