These are cookies that little girls can never get enough of. They don’t only look cute but taste good too. I made these for my niece and she was thrilled!

How To Make Hello Kitty Cookies


Yields: 22 pieces

INGREDIENTS:

125g butter (room temperature)
50g icing sugar ( I used brown sugar and blend in food processor until fine)
¼ tsp vanilla extract
125 g all-purpose flour or plain flour
75g potato starch
50g cornflakes, blend in food processor until fine *
½ tsp double action baking powder
½ tsp salt

Heart shaped decoration sugar
Round shaped decoration sugar

Glue:  1 tbsp + 1 tsp icing sugar dissolved with 1 tsp hot water

* Please replace cornflakes with plain flour if not available.

METHOD:
  1. Preparation:
    1. Move the oven rack to the middle position and preheat oven to 150 degree C. 
    2. Line a baking trays with parchment paper and set aside.
  2. Making Cookie Dough:
    1. In a bowl, shift in the flour, potato starch, baking powder and salt.  Add in cornflake and mix together.  Set aside.
    2. In a bowl of a stand mixer beat the butter and sugar together until light and fluffy. Scrape down the sides of the bowl with a rubber spatula. Add vanilla extract, beat on medium-low until well mixed.
    3. Gradually stir in the flour mixer to butter mixer until well-combined.
  3. Shaping:
    1. Pour onto tabletop, knead with your palms to form a dough.
    2. Roll out the dough to ¼ inch thick, use Hello Kitty shape cookie cutters to cut the shape. Dip the bottom portion of the mound/cutter in flour first each time before cutting the dough to prevent the dough from sticking. Arrange the cookies on the lined baking tray, 1 inch apart.
  4. Baking & Decoration:
    1. Bake in the preheated oven for 25 - 30 minutes till cooked through. Cool on a wire racks.
    2. Dip the bottom part of heart shape decoration sugar in glue and place on as the ribbon. Dip bottom of round decoration sugar in glue and place on as the eyes and nose.
    3. Store in airtight container.

Note:  Do note that the baking temperature and timing provided are what works for my oven and should also be regarded as a guide only. Every oven behaves a little differently, so please adjust accordingly for your oven.

    Your cookies are so lovely. I tried and taste good. One thing is that I have difficulty to use the mould. The dough stick to the mould.

      Thank you for your comment. Yes, I agreed with you the dough stick to the mould. Please dip the bottom portion of the mound/cutter in flour first each time before cutting the dough to prevent the dough from sticking.
