CHOCOLATE COOKIES

Crunchy, yummy and not so sweet.

This recipe was adapted from Baking and Life.

My step daughter made a cross-hatch design so it won’t be so plain. Baking cookies with her was fun because she is good at crafting with her hands.  It saved me a lot of time.

Makes 25

INGREDIENTS:

100g dark chocolate, chopped
125g butter
100 g Caster sugar
1 large egg
220g plain flour
2 tbsp cocoa powder
1 tbsp hot chocolate powder
½ tsp baking powder
½ tsp bicarbonate of soda
¼ tsp salt

METHOD:

1.  Mix sugar and butter together until soft and fluffy.
2.  Beat in egg.
3.  Shift flour, cocoa powder, hot chocolate powder, baking powder, bicarbonate of soda and salt. Stir in the flour mixture and mix well.
4.  Stir in the chopped dark chocolate.
5.  Roll heaped table spoon and flatten on greased baking trays.
6.  Preheat oven to180C. Bake for about 12 – 15 minutes, leave to cool before transferring to wire rack.
