Pesto Sauce

This recipe is adapted from Vitamix Blender Cookbook with some modifications.  I used Thai Basil Leaves from our garden and replaced pine nuts with cashew nuts.  I am very happy with the result and it tasted very good to me.

Homemade Pesto Sauce Recipe - Using Thai Basil Leaves 


INGREDIENTS:

80g fresh basil leaves (I used Thai Basil Leaves)
3 cloves garlic, peeled
50g cashew nuts, roasted (can be replace with pine nuts or walnuts)
60g grated parmesan cheese
120g extra virgin olive oil
Salt and pepper to taste

METHOD:
  1. Place all the ingredients, except salt and pepper in the blender container.  Close the lid and blend until all the mixture is blended, but still has some texture.  Scrape down the sides if necessary.
  2. Transfer to a bowl and can be used straight away.  You may also  store in an airtight container in fridge for up to a week or until it turns bad.
