This Banana Bread recipe is quite similar to the Banana Muffin I shared previously.  I used the same method of preparation but I baked it in a loaf pan instead.  The texture is so moist, soft and fluffy.  My family really like it.

To be honest, I still don't understand why it is called Banana Bread.  The texture is closer to a cake or muffin and it's not like regular bread at all.

Recipe:  Banana Bread 


Yields:  1 loaf

INGREDIENTS:

250g all-purposed flour
2 tsp baking powder or double action baking powder
1/2 tsp baking soda
1/2 tsp salt
90g fine brown sugar or caster sugar

240g - 250g overripe banana (about 4 big banana)
110g butter, melted
60g greek plain yogurt
2 large eggs (about 108g without shell)
1 tsp vanilla extract or paste

Utensil:
8” Loaf Pan (21.3cm X 11.2cm X 5.8cm) 


METHOD:
  1. Preheat oven to 175C  (top and bottom heat)
  2. Line loaf pan with parchment paper
  3. Sift flour, baking powder, baking soda together in a bowl.  Stir in salt.  Set aside.
  4. Melt butter in microwave.  Set aside to cool.
  5. In a mixing bowl, mash the banana with folk or potato masher.
  6. Add in sugar, melted butter, yogurt, eggs and vanilla extract.  Mix until incorporated.
  7. Fold in flour mixture and mix until everything is just combined
  8. Pour the batter into the loaf pan.
  9. Bake in a preheated oven for about 50 - 55 minutes or until a skewer inserted into the centre comes out clean.
  10. Remove from oven and let it cool for a few minutes before removing bread from the pan.  
  11. Let the bread cool before slicing and serve.
