Roti Jala

April 18, 2020 | Recipe by Bake with Paws

I bought a Roti Jala bottle several years ago and totally forgot about it.  Making Roti Jala (Net Pancakes) for lunch is perfect as comfort food for this lockdown period.  My first attempt turned out very soft and it went really well with my Nyonya Curry Chicken.  The Nyonya Curry Chicken Recipe is available here.  The Roti Jala recipe is adapted from Seasaltwithfood with slight modifications.

If you do not have this Roti Jala bottle, you can use an empty mineral water bottle with a few holes on the cover/cap that be made with a nail.

Roti Jala (Net Pancake) Recipe

Yields:  20 roti jala

INGREDIENTS

Dried Ingredients:
200g plain flour
3/4 tsp turmeric powder (original recipe used 1/2 tsp)
1/2 tsp salt

Wet Ingredients:
2 eggs (large)
200g water
200g coconut milk

Oil for brushing the pan

Tools:

10" non-stick pan
5 nozzles roti jala bottle

METHOD:
  1. In a mixing bowl, combine all the dried ingredients.
  2. In a separate jar, combine all the wet ingredients and whisk till the egg mixed well.
  3. Pour the wet ingredients mixture into the dried ingredients and mix with a hand whisk until a smooth batter forms.
  4. Strain the batter through a strainer.  Pour the batter into the Roti Jala bottle until half full.
  5. Heat a non-stick pan on low fire and brush with little oil. Squeeze the bottle and move in a circular motion to create a lacy design.
  6. Remove the pancake once it is changed to lighter color. Continue to finish all the remaining batter.
  7. Fold in both sides to the centre and roll it to form a small log.
  8. Serve warm with Chicken Curry or Chicken Rendang.
