How To Make Sesame Crisp Bars

INGREDIENTS:

Dried Ingredients
400g white sesame seed
60g black sesame seed (can be replaced with white sesame)
140g pumpkin seed (can be replaced with almond flakes or other seeds)
1/2 tsp salt

Wet Ingredients
3 egg whites (around 110g - 115g)
150g honey (I used raw honey)

Utensil
Baking tray (33cm X 38cm, 2.5cm height)

METHOD:
  1. Line the baking pan with parchment paper and preheat the oven to 170C (top and bottom heat) or 150C (fan mode).
  2. Toast both white and black sesame seeds on a dry pan until light golden brown and aromatic.  Please make sure not to over toast otherwise the sesame will turn bitter. Set aside to cool.
  3. Toast pumpkin seed on the pan too until you can hear the popping sound.  Set aside to cool.
  4. Place all dried ingredients in a mixing bowl and mixed well.
  5. In a jar, add in all the wet ingredients and whisk with a hand whisk until all combined.
  6. Add the wet mixture to the dried ingredients and stir to combine.
  7. Press the the mixture into the prepared baking pan.
  8. Bake in a preheated oven for around 15 - 20 minutes or until golden brown.
  9. Remove from oven and let it cool.
  10. Once it is cooled, place in refrigerator for at least 1 hour before cutting the bar.  Remove the sesame bar from the tray.  Turn around and carefully peel off the parchment paper. Cut into the your desired size.
  11. Transfer to an airtight container and it is best to store in the fridge.
Note:
  1. Do note that the baking temperature and timing provided are what works for my oven and should also be regarded as a guide only. Every oven behaves a little differently, so please adjust accordingly for your oven.
  2. It is best to store it in the fridge for crunchy and crispy texture if your environment is warm and humid.
