This is a  Healthy Flourless Oatmeal Cookie that is crunchy and perfectly vegan. This recipe is derived from  my Crunchy Oats & Nuts Cookies  recipe that I shared some years back.   Delicious!!

How To Make Flourless Oatmeal Cookies (Crunchy)


Yields:  Approx. 30 cookies

INGREDIENTS:

Wet Ingredients:-
200g - 220g organic extra virgin coconut oil *
4 tbsp honey
1 tsp vanilla extract/paste

Dry Ingredients:-
250g rolled oats, blended till fine
160g rolled oats
2 1/2 tsp baking powder
1 tsp baking soda
1 tsp salt (please cut into half if you don't like too much salt)
1 tsp ground cinnamon 
50g almond flakes, toasted
50g pumpkin seed, toasted
60g dried cranberry
2 tbsp chia seeds

*You may need less or more oil to make the dough stick together.  The amount given just an estimation.

METHOD:
  1. Move the oven rack to the middle position and preheat the oven to 180 C. Line 2 baking trays with baking papers and set aside.
  2. In a big mixing bowl, combine all the dried ingredients.
  3. In a jar, add in all the wet ingredients and whisk with a hand whisk or fork until all combined.
  4. Add the wet ingredients mixture to the dried ingredients and stir to combine.
  5. Roll the dough mixture into balls. Place the cookies about 1 inches apart on the lined baking tray.
  6. Using 2 fingers, lightly press down on each cookie dough ball to flatten it.
  7. Bake 15 to 20 minutes or until the cookies just start turning golden brown.
  8. Let cookies cool on a wire rack completely before storing in the air tight container. They will crisp up as they cool.

Note:  Do note that the baking temperature and timing provided are what works for my oven and should also be regarded as a guide only. Every oven behaves a little differently, so please adjust accordingly for your oven.

  3. thank you for your recipe, I run out of the rolled oats but have some finely blended, can I just use them all?

    1. Hi, thanks for trying. You need to add more oil and press with your hand to shape into a ball. The oil amount just an estimation.

  8. Hello, do I need to soak the cranberry

    1. Hi, I didn't soak the dried cranberry unless is non organic. I rinse with hot water and let it dry on kitchen towel. This is just to remove the wax when I couldn't get the organic dried cranberry.

      I afraid the cranberries will be too wet for baking cookies if I soak them.
