How To Make Pandan Paste (Concentrated Pandan Juice)

A lot of people has been asking me how to make concentrated pandan juice.  So, I thought it will easier just to show it. There are other ways to extract the juice.  But, this is the method I like to use.

How To Make Pandan Paste (Concentrated Pandan Juice)


Yields:  Approximately 50g Pandan Paste

INGREDIENTS:

20 (160g) pandan leaves 
350g water

Note:  I usually used boiled water at room temperature.

METHOD:

Day 1:
  1. Cut the pandan leaves into chunks.  Blend pandan leaves with water in a food processor until fine.
  2. Strain the blended pandan pulp through a sieve and squeeze out the juice.  Pour into a jar.
  3. Cover the jar and leave the pandan juice in the fridge.
Day 2 (After 24 hours):
  1. The chlorophyll and water have separated. Pour away the clear top layer and keep the bottom concentrated juice.
  2. Cover and put back in the fridge again.  
You may use the juice now.  But, I usually leave it for another day

Day 3 (After 48 hours):
  1. Repeat the process to clear the separation.
Day 4:
  1. Repeat the process to clear the separation.
By now the the juice will be very concentrated.  If you like your pandan juice to be more concentrate, use it after 5th night. The chlorophyll will sink.  The longer the better.  The juice may be kept in the fridge for up to a week or until it turns bad.

I tried out this method exactly (same amount of water and pandan leaves); however, after over 48 hours of storing the pandan juice in a covered container in the fridge, I observe very minimal separation, and nothing like the separation seen in your video tutorial (no noticeable build up of green pandan concentrate separated from water).

    Is there anything I should make sure to do or did wrong? Does this mean my pandan juice is already so concentrated that there is no water? Any tips/thoughts you have will be appreciated. Thank you again for this tutorial!

    1. Hi, thanks for trying this method. This happened to me once in a while. I just let it sit for another one or two more nights. It will eventually separate later.

      You can cut down more water if your processor can run with minimal liquid.

  4. can i know what is cake flour? is it self raising flour?

    1. Hi, Cake flour is a low protein flour and very fine flour than all-purpose flour. It contain lower protein than AP flour. It is different from self raising flour.

    1. Hi, Thanks for asking. I never used pandan essence in all my baking. I think you can replace pandan juice with milk or coconut milk and just add pandan essence.

  7. Can this be done with frozen pandan leaves without it going bad before the process is complete?

    1. Hi, thanks for reading this post. To be honest, I am not sure. I did try freeze the pandan leaves before when I have too much from the garden. However, the smell change.

  8. Hi. If I use Pandan essence to replace Pandan juice, how many tsp of Pandan essence and how many grams of coconut milk is required ?
